Chef Ali Mandhry provides a straightforward recipe for pepper-roasted lamb chunks. The ingredients include 1kg of lamb chunks cut into bite sizes, salt, 1 teaspoon of black pepper, 1 tablespoon of minced garlic and ginger, 100ml of thick plain yoghurt, chopped coriander for garnish, and vegetable oil for pan-searing. Marinate the lamb chunks in these ingredients for about an hour. Then, pan-sear the lamb chops in vegetable oil over high heat for approximately 3 minutes per side. Remove from heat and place on a baking tray lined with foil. Roast in the oven at 200°C for about 10–15 minutes. Finally, sprinkle with fresh coriander and serve with ugali. Enjoy!
